PUMPKIN AND ROOT SALAD

Ingredients

2 cups (500 mL) pumpkin flesh finely grated raw
2 cups (500 ml) of raw carrots finely grated unpeeled
½ small finely grated peeled raw turnip
1 small unpeeled raw beetroot finely grated
2-3 chopped shallots
1 small clove of garlic
2 c. tablespoons (30 mL) finely chopped fresh parsley
¼ to 1/3 cup (65-85 ml) vegetable oil cold pressed
2 c. tablespoons (30 ml) lemon juice, vinegar, apple cider or wine vinegar
½ to 1 c. teaspoon (2-5 ml) sea salt
Pepper to taste
Optional: raisins

Preparation

Mix well all ingredients and chill before serving.
