DELICIOUS WILD BOAR STEW

DELICIOUS WILD BOAR STEW

Ingredients


5 to 7 lbs (2.5 to 3 kg) wild boar loin or meat of your choice (pork, veal, beef)
6 cups (1.5 liter) vegetable stock
2 cups (500 ml) white wine or vegetable juice
1 ½ cups (375 mL) sliced ​​mushrooms
2 carrots, sliced
2 stalks celery, chopped
1 onion, chopped
2 c. tablespoons (30 ml) olive oil
2 c. tablespoons (30 ml) chopped garlic
1 c. tablespoon (15 ml) basil
1 c. tablespoon (15 ml) thyme
1 c. tablespoon (15 ml) rosemary
1 c. teaspoon (5 ml) ginger
1 c. teaspoon (5 ml) nutmeg
1 c. tsp (5 ml) cilantro
1 c. teaspoon (5 ml) curry Madras
½ c. tsp (2 ml) sea salt
½ c. tsp (2 ml) pepper



 

Preparation

1. Saute the vegetables and spices in olive oil for 5 to 10 minutes over low heat.

2. Add white wine (or vegetable juice) and bring to boil.

3. Add the vegetable broth.

4. Place meat, vegetables and broth in a roasting pan.

Bake at 300 degrees F (150 degrees C) for 3 hours.
