GLUTEN-FREE APPLE MUFFINS

GLUTEN-FREE APPLE MUFFINS

Ingredients

Yields 12 muffins

  • 1 cup (250 ml) brown rice flour
  • ½ cup (125 ml) millet flour
  • ½ cup (125 ml) almond powder
  • ¼ cup (65 ml) tapioca flour
  • 1 tablespoon (15 ml) guar gum or xanthan
  • 1 tablespoon (15ml) alum-free baking powder
  • ½ teaspoon (2 ml) cinnamon
  • 1 pinch of salt
     
  • 2 eggs beaten
  • ¾ cup (185 ml) almond or rice milk
  • 2/3 cup (165 ml) olive oil
  • ½ cup (125 ml) organic apple sauce
  • 1 teaspoon (5 ml) vanilla
  • 3 large grated organic apples

Preparation

  1. Preheat oven at 400°F (200°C).
  2. In a bowl, mix the flours, guar gum, baking powder, cinnamon and salt.
  3. In another bowl, beat the eggs, almond or rice beverage, olive oil, apple sauce and the vanilla until all ingredients blended in a uniform texture.
  4. Blend the contents of both bowls (the dry and the liquid), add the grated apples and mix slowly.
  5. Pour the batter in a muffin mold and bake between 25 to 30 minutes

NB: The use of organic ingredients is recommended.
