BANANA COOKIES
Ingredients
2/3 cup (175 ml) of vegetable oil
1 organic egg
3 ripe organic bananas
½ teaspoon (2 ml) of vanilla
1½ cup (375 ml) whole wheat pastry flour
1 ¾ cup (440 ml) oat flakes
½ cup (125 ml) chopped walnuts (optional)
½ cup (125 ml) dried fruits (optional)
1 teaspoon (5 ml) cinnamon
1 teaspoon (5 ml) sea salt
1 teaspoon (5 ml) baking powder (without alum)
½ teaspoon (2 ml) nutmeg
¼ teaspoon (1 ml) baking soda (without alum)
Preparation
In the blender, blend the liquid ingredients and add the bananas. Mix until you have a cream consistency.
In a bowl, mix all dry ingredients, and add the nuts and dried fruits. Pour the creamy mixture on the dry ingredient and mix well.
Put the mixture on a cookie sheet using a spoon. Bake at 375 F (190 C) about 15 minutes or until golden.
