BANANA COOKIES

Ingredients

  • 2/3 cup (175 ml) of vegetable oil
  • 1 organic egg
  • 3 ripe organic bananas 
  • ½ teaspoon (2 ml) of vanilla
  • 1½ cup (375 ml) whole wheat pastry flour  
  • 1 ¾ cup (440 ml) oat flakes  
  • ½ cup (125 ml) chopped walnuts (optional)
  • ½ cup (125 ml) dried fruits (optional)
  • 1 teaspoon (5 ml) cinnamon 
  • 1 teaspoon (5 ml) sea salt 
  • 1 teaspoon (5 ml) baking powder (without alum)
  • ½ teaspoon (2 ml) nutmeg  
  • ¼ teaspoon (1 ml) baking soda (without alum)

Preparation

  1. In the blender, blend the liquid ingredients and add the bananas.  Mix until you have a cream consistency.
  2. In a bowl, mix all dry ingredients, and add the nuts and dried fruits.  Pour the creamy mixture on the dry ingredient and mix well.
  3. Put the mixture on a cookie sheet using a spoon.  Bake at 375 F (190 C) about 15 minutes or until golden.
