NUTRITIOUS CARROT SALAD

NUTRITIOUS CARROT SALAD

Ingredients

In a bowl, mix together:

  • 4-5 grated carrots
  • 2 tablespoons (30 ml) dried cranberries or raisins (or both) 
  • ½ cup (125 ml) of cooked quinoa 
  • 1 grated shallot    
  • 1 finely chopped celery branch, optional

Here are 2 options for the vinaigrette :

1) Blend together until creamy:

  • 1/3 cup (85 ml) mayonnaise (or half mayonnaise half plain yogurt)
  • 1 tablespoon (15 ml) maple syrup
  • ½ to 1 teaspoon (2 to 5 ml) curry
  • ½ teaspoon (2 ml) Dijon mustard, optional
  • Juice of half a lemon

2) In a blender, mix together :

  • ¼ cup (65 ml) cashew nuts
  • ¼ cup (65 ml) water
  • 1 tablespoon (15 ml) maple syrup
  • 1 teaspoon (5 ml) apple cider vinegar
  • ½ to 1 teaspoon (2-5 ml) curry
  • ½ teaspoon (2 ml) Dijon mustard, optional
  • Juice of half a lemon

Add the chosen vinaigrette to the carrot salad and keep refrigerated.
