THOUSAND ISLAND DIP

Ingredients

  • 1 cup (250 ml) mayonnaise 
    OR
  • ½ cup (125 ml) mayonnaise
  • ½ cup (125 ml) plain yogurt
     
  • ¼ cup (65 ml) pitted black olives 
  • 2 tablespoons (30 ml) green peppers (or half green half red)
  • 2 tablespoons (30 ml) tomato paste
  • 1 tablespoon (15 ml) chopped onion
  • 1 teaspoon (5 ml) spicy green pepper 
  • ¼ teaspoon (1 ml) vegetable salt 
  • Pepper, to taste

Preparation

Mix the following ingredients in the food processor for a few minutes

The dip is best when there are a few small vegetable pieces in the preparation.  Keep refrigerated.


Serve with raw vegetables: carrots and celery sticks, cauliflower and broccoli florets, mushrooms, peppers cut into sticks, sliced cucumbers, etc.
