1 ½ cups (375 ml) of 2% organic milk or milk substitute (soy, rice, almond or coconut milk, etc…)
½ cup (125 ml) of dates in cut in tiny pieces.
2 organic egg yolks
3 - 4 tablespoons (45- 60 ml) of baking flour
½ teaspoon (2 ml) vanilla
1 -2 teaspoons (5-10 ml) margarine or butter
Place in blender: milk or milk substitute and dates. Mix thoroughly. Pour in saucepan and heat.
Meanwhile, beat the egg yolks and add flour while mixing. If texture is too thick, dilute mixture with a little water. Make sure final texture is smooth.
Add a little of the heated milk mixture to the egg and flour blend and mix again. Pour the mix in the remaining heated milk in the pan and keep on whipping vigorously with a beater until mix thickens to a creamy texture. Withdraw from heat, then add vanilla and margarine or butter.
Let cool a little and pour into prepared pie crust.
