FREEKEH SALAD

FREEKEH SALAD

Ingredients

  • 2 cups (500 ml) cooked Freekeh (cracked or whole)
  • 1 cup (250 ml) roasted green, yellow or red bell pepper, cut into strips
  • 1 cup (250 ml) grilled eggplant, chopped
  • 2 bunches fresh coriander, roughly chopped
  • 1 cup (250 ml) dates, chopped
  • 1 cup (250 ml) dried apricots, chopped
  • 1 small red onion, finely sliced

Dressing

  • Juice of 3 lemons
  • 1/2 cup (125 ml) olive oil
  • 2 tbsp (30 ml) raw sugar or honey
  • Salt and pepper to taste

 

Preparation

Toss all the ingredients together. Coat lightly with dressing. Toss thoroughly and serve at room temperature.
