Ingredients

4 servings

  • 2 cups (500 ml) cooked Freekeh (cracked grain only)
  • 1 pound (454 g) minced beef, chicken or lamb
  • 1 egg, lightly beaten
  • 1 cup (250 ml) chopped pine nuts
  • 3 cloves garlic, crushed
  • 1/2 cup (125 ml) chopped, fresh coriander
  • 1/2 cup (125 ml) chopped parsley
  • 2 tsp (10 ml) ground coriander seed
  • 1 tsp (5 ml) ground cumin
  • 1 tsp (5ml) cinnamon
  • 1/4 tsp (1 ml) ground cloves
  • 1/2 tsp (2 ml) finely ground black pepper
  • 1 tsp (5 ml) salt
  • 2 tbsp (30 ml) olive oil (+ extra olive oil for cooking)

 

Preparation

Mix all ingredients together well and knead for 5 minutes or until the mixture comes together. Shape into balls or patties (size as required). Brush lightly with extra olive oil and bake at 350 degrees 15-20 minutes until firm and golden (cooking time will depend on size of kibbies). Can also be cooked on the barbecue.
