Lentil Burgers

Ingredients

4 to 5 burgers.

  • 1 cup (250 ml) cooked and drained lentils
  • 1 small onion finely chopped
  • 1/3 cup (85 ml) grated cheese
  • 2 tablespoons (30 ml) finely grated carrots
  • 2 tablespoons (30 ml) very finely chopped celery
  • 1 to 2 tablespoons (15 to 30 ml) dried breadcrumbs
  • 1 tablespoon (15 ml) tomato paste
  • 1 tablespoon (15 ml) tamari sauce
  • ½ teaspoon (2 ml) garlic powder, or one grated garlic clove
  • ¼ teaspoon (1 ml) basil
  • ¼ teaspoon (1 ml) oregano
  • 1/8 teaspoon (½ ml) sage
  • Fresh breadcrumbs (optional)

Preparation

  • Mash the lentils and add all the other ingredients. Mix well.
  • Shape the mixture into burgers and coat with fresh breadcrumbs. To make the fresh breadcrumbs, place a few bread pieces into a blender and reduce to crumbs.
  • Place the burgers on an oiled cookie sheet or on a parchment paper on a cookie sheet. Bake in the oven at 375 degrees F (190 degrees C) for about 20 minutes.
  • Serve the burgers in buns with your favorite toppings, OR serve with tomato sauce and vegetables and rice (or quinoa).

NB : The grated cheese can be replaced by a casein-free cheese or grated tofu. The breadcrumbs can be made from gluten-free bread.
